Please don’t fear your chef’s knife!

It seems a lot of my customers pretty much use a paring knife for all food prep rather that the a knife that would be better suited for the job at hand.

I often hear that a chef's knife is 'scary.'

The standard chef's knife has an 8" blade, but there other choices. The picture with this blog shows a 10", an 8", 6" and even a little guy, a 4" chef's knife.

A paring knife is designed to be used while holding the food item, like trimming the crown of a strawberry. A chef's knife is designed to be used for any and all prep work on the cutting board. A paring knife is a poor choice for cutting board work as it is not a sturdy knife, the sharpness will not hold up to cutting hard items like carrots.
